Recipe of the Month: Roast Yam and Kale Salad
Each week, members of OUR Goody Box CSA will receive a recipe card designed to feature one of the ingredients they receive in their boxes. Every west coast gardener (and foodie!) will recognize kale as a spring staple around these parts. The dark leafy green is rich in vitamins and minerals, and is delicious raw, yet also hearty enough to stand up to cooking. This cooked and then chilled salad is a great dish to start off a hearty winter’s meal, or filling enough to use for a summer lunch.
